This is a carbon steel blade, unlike many stainless steels its edge is easily maintained however care must be taken when cleaning after use. After use, clean with hot water and a towel, no soap. For blades that will be used in food preparation we recommend mineral oil, otherwise a simple oil such as 3-in-1 may be used. For storage, do not keep in contact with leather and periodically oil the blade to prevent oxidation.
